I have been diagnosed Celiac for 9 years and have been baking since I was 7 years old. Even though I still have a pantry of alternative flours for all my adapted and tweaked recipes, I love this flour mix for it's ease in using in gluten-free baking. You can replace it cup for cup in any of your previous wheat flour recipes. Recently, my culinary trained sister made a pineapple upside down cake for her birthday and she wanted me to be able to share, so she used my flour and she says she loved everything about it. It was a beautiful cake with a soft moist crumb and it tasted fantastic! And I have yet to be disappointed in anything I have baked using this flour.
I highly recommend it to not only those who must eat gluten-free, but also for those who are just trying to cut down on their wheat consumption and add more variety to their diet.

This flour tastes just like wheat flour and is the perfect substitution so any recipe can be gluten-free.
