Suggestions for making the muffins taste better (additions to recipe) January 16, 2008 loving mama (new york) When the muffins are baked according to the package directions, my son gives these muffins 4 stars, I give them 2 stars, so I averaged it out to 3, but they are much, much improved with the following adjustments: ADD --one cup of soy protein powder (mix it in with the dry ingredients with a fork before adding the wet ingredients--this adds nice weight to the muffins and makes them a more balanced breakfast --sprinkle in just a little extra sugar to get rid of that acetic lemon attribute (it tastes like baking powder) and to make up for the soy protein (which is not sweet) --one cup of cinnamon applesauce (mixed with your wet ingredients first) to make up for the dry ingredients above --1 banana to add weight and texture to the muffins so that they feel like muffins and not cake in your mouth--it also tones down the acetic lemon bite --use the recipe on the box that calls for oil and water not just water, and add a little extra oil if needed to mix the ingredients --bake at 375 in a convection oven for 22+ minutes (you will need to bake the muffins for quite a few minutes longer than indicated on the box........for a regular oven you could keep it at 400.) I hope that helps! I would welcome any other baking suggestions for these muffins, since I have 3 more boxes to use..........

I can't say enough about these gluten-free muffins. I always think that if kids like a food then it must be delicious; and these muffins were devoured by a group of 8 and 10 year olds. A teflon-lined muffin pan (that I also buttered lightly) browned the bottom and sides nicely and added to the yummy, buttery, flavor.
