I made this cake for my son's 8th birthday. He is the only one with Celiac in our family. The cake was a great texture, firm and moist. With the lemon glaze recipe included, it had a nice lemony flavor. The only drawback is the bean flavor that overpowers it a bit and leaves an aftertaste(or maybe it is the quinoa). My daughter said, "It's kind of weird, kind of good." That really sums it up. I'm still searching for a great GF cake that is not chalky and not beany.

WOW, this is fantastic. Nice lemon flavor, very moist, and stayed moist several days, which is great for a gluten free product. Also dairy free. I saved a few calories by using 1/3 cup plain applesauce in place of 1/3 of the oil called for in the instructions and I think that made it better.
