Best Corn Bread Ever!!! August 6, 2008 P. Lee (NJ) I found this while boating in the Pacific NW... looking for something easy to make while on the boat! I was intrigued by the "gluten free". The result... this was THE BEST CORNBREAD!!! My husband and I loved it because it wasn't as sweet as other mixes, and was nice and grainy as well. I also added a bit more liquid as others have... and it is best eaten fresh. But, for the "next day" a little butter... glass of milk... or dipping into food... provides any additional moisture needed! Try it!!! You won't be disappointed!!!
delicious, gluten free, versatile! July 17, 2008 katherine (baton rouge, la) I *LOVE* this corn bread mix. It is the most versatile gluten free mix I've bought. It's hard to mess up, and works with everything!
I buy it by the case, and use it several times a week in various things. It obviously makes corn bread, but you can add a bit of sugar and make sweet corn muffins. I also use it as a batter for frying... spiced it makes a great southern fried chicken and plain it makes amazing fried eggplants.

I tried this cornbread for the first time tonight with dinner. I was very impressed! I have been experimenting with making gluten-free cornbread from scratch using masa, cornmeal, and other ingredients, with passable results. But this was much better, and a whole lot easier! Next time I think I'll try adding a can of creamed corn to the mix; it's something I've always liked to do with the old Jiffy mixes to make them more, well, corny. My whole family liked the corn bread, including the gluten-eating family members. It rose up nice and had a great flavor and texture.
Good February 13, 2008 Linda A. Hammersmith (Sister Bay, Wisconsin United States) o.k - my husband and brother would give this product the full 5 stars. As a cook, I find the end result too heavy. Also, I think there is an error in liquid amount - I always have to add more or it is so thick it wants to run up the beaters on the mixer! On my next batch I think I will try adding the yolks, beat the whites separately and fold in. Makes a 9x13 pan.
Hooray! This product saved our holidays! January 29, 2008 Fratina (San Francisco Bay Area) Over the past few years several family members have developed food sensitivities and serious food allergies. It has been especially difficult to prepare holiday meals where no one feels left out or deprived, but that is a problem no more. This cornbread mix is delicious (the first time I made it for the gluten-intolerant people and made regular cornbread for everyone else. Now I make Bob's Red Mill gluten-free cornbread for everyone, and it is a hit!) Leave it in the oven until it's golden brown and remove it from the pan while it is still warm (not hot). If there's any left over(not likely), it's great toasted in the oven for breakfast. OK, I know that because I hid a piece at Christmas...
