Susan O'Brien has had an interest in natural foods and nutrition. She has used this interest to aid her in her own dietary needs. She had worked as a gourmet cook, cooking instructor, baker and as a consultant for food management, as well as medical education.
Each recipe is labelled as to what the recipe is free of, such as no dairy, no eggs, and no nuts, as well as being sugar-free and gluten-free. The recipes are easy-to-follow and are delicious.
This cookbook, also, does not have photographs or illustrations. There is a chapter on how to substitute sugar and wheat flour for other products, in an effort to increase creativity and independence. There is, also, a resource guide to help you find those hard-to-find ingredients.
Some of the delicious recipes you can find in this book are: Potato Scones, Blackberry Cobbler, Prosciutto and Veggies, Quinoa and Tofu, Chai Tea and Meatballs.

When I was diagnosed with gluten, wheat and egg allergies, I wasn't sure how I would survive. Initally, it was on rice, vegtables, and lean meats. Now, thanks to this cookbook, I can cook wonderful easy meals for myself and my guests. No one knows it's gluten and sugar free, because it all tastes so good.
I'm also a dermatologist and have begun recommending this cookbook to my acne, eczema and psoriasis patients with fantastic results. We don't even bother with the formal allergy testing. The patients try the diet for 3 wks, many of them are so much better, they are convinced to continue.

Because the explanations are thorough and easy to understand, I found the recipes to be uncomplicated and simple to prepare. One of the particularly beneficial features of the book is the variety of recipes offered. I was pleasantly surprised by how tasty healthy substitutions can be! I would highly recommend this book to anyone with food allergies, parents of children with food-related behavioral difficulties, or those who simply want to follow a healthy lifestyle.
