Why use white flour? The flours in this product are so healthy and lend a very yummy flavor to many savory and sweet recipes. This is not a "delicate" flour but it makes great crusts, crackers and heavier breads. This flour is certainly one of the best gluten free products out there. Very tasty and very healthy for you.

I'll say up front that I'm very picky about food flavors. So after trying Bob's Red Mill gluten-free flour, which I wasn't pleased with, I'm on a quest to find a non-bean-tasting wheat-flour replacement. This one is pretty good -- I've tried it in my mother's cornbread recipe (and yes, I remembered the xanthan gum), and while there's a slight beany flavor/aroma, it's not overpowering and there's not a noticeable aftertaste. I plan to try a couple of others before declaring it the best, hence the four stars...

This flour worked pretty well, but I didn't see the tiny little warning that said I would need to use xanthan gum (binding agent) in the recipe when I ordered. When I did notice (in the middle of making gingerbread cookie dough), I figured I could just run out to the grocery store and pick some up. Couldn't be that hard to find right? Wrong. 3 grocery stores and a GNC later, I ended up using regular flour until I could order some xanthan gum online. If you order this flour, make sure you purchase or locate this stuff before you need to use it.
The amounts of xanthan gum recommended on the package are:
NONE for pancakes and waffles
3/4 tsp. per cup of flour for muffin/biscuits/scones
1 tsp. per cup of flour in cookies/cakes/pie crust/pizza dough

Finally I can bake all my old favorites and have them come out just like regular gluten items. I have tried so many other flours and combinations of flours, but nothing works like this.
I have made cakes, donuts, bread, and cornbread. All have been so wonderful that my husband keeps asking me if I am sure this flour is gluten free. My cornbread came out just like the old jiffy mix we have so dearly missed.

I make an awesome carrot cake with this flour twice a year and you would never know it was gluten free. It's very hard to bake with the different blends of flour, but this all purpose flour is terrific. If you want to bake gluten free, use this for anything you used to make with all purpose flour.
